Throughout the Fall and Winter months I always try to have soup on hand for those days when I'm chilled to the bone or lack ambition or energy to put together a healthy, well balanced meal. Unlike many foods, the best part about soup is that it tastes even better the next day. Cook once - eat all week - that's my style!
This particular soup is "souper" (I had to) hearty and healthy. Here are 3 things worth talking about:
1. It has a low glycemic index (GI) which means it is digested slowly by your body. This will help control your blood sugar levels.
2. It is chock full of fibre which will help improve your cholesterol and digestion.
3. It will fill you up! The fibre, protein, and low GI value means that it will most certainly satisfy you. There's nothing wimpy about this soup.
