Homemade nut butter is really easy to make - all you need is a food processor or a powerful blender. I much prefer it over store bought nut butter - mainly because it smells so fresh and you can flavour it any way you like. Plus I feel super accomplished after making it (even though it's the easiest thing in the world). You can use any nut you have on hand (although I always recommend unsalted nuts) or mix and match different types of nuts. You can enhance the flavour by adding spices like cinnamon and nutmeg, or toss in ingredients like unsweetened coconut or vanilla extract. The best part of all: No added sugar, salt, or fat like you sometimes find it the store-bought stuff.
Recipe: Vanilla Cashew Butter
Unsalted cashews - 1 cup
Sprinkle of cinnamon - sprinkle
Vanilla extract - 1/8 tsp
Throw all ingredients into a food processor and let it run for about 5-8 minutes, or until the nuts turn into butter. The longer you run the processor the creamier it will become. You may need to stop half way and scrape the sides of the food processor.
Store the nut butter in the refrigerator. It should last about a month.
